I’ve had two babies turn one, and with each first birthday party I’ve made an orzo pasta dish. With Alina, it was a garlic roasted vegetable orzo pasta salad that was dripping with a balsamic dressing – so yum! But since Sebastian’s first birthday Very Hungry Caterpillar party was on a much warmer day, I just didn’t feel like turning on the oven to roast veggies. So, I decided to make a Pesto Pasta Salad using orzo instead.
This Pesto Pasta Salad is very easy to make and could be altered to fit your particular tastes any number of ways. You could even try it with my Cilantro Pesto instead! The exact quantities are not diligently noted on this recipe, as it is really very simple. Use your taste buds to tell you how much of each ingredient you need!
Pesto Pasta Salad Recipe
Box of Orzo pasta, cooked according to package instructions (I only needed half the box)
Grape Tomatoes, halved
Feta cheese, 1 package
Pesto, homemade or prepared *my favorite prepared pesto comes from the refrigerator section at Fresh and Easy.
After you have cooked the orzo according to the package instructions, add your pesto and grape tomatoes and stir gently. Add just a bit of the feta cheese to create a creamy texture to the dish. Set the pesto pasta salad in the frig to cool. Before serving, crumble the remainder of the feta cheese on top.
