Indian Garbanzo Bean Summer Salad Recipe

Summer salads are so good right now, especially in our household! Warm weather, busy schedule and outdoor picnics make summer salads the perfect go-to. Summer salads as a side are an easy way to add vegetables to your kids’ meal, too! My kids love Greek salads, fruit salads and, now, this vibrant and flavorful Indian Garbanzo Bean Summer Salad.

This summer salad recipe is heavy on the spices, but it super easy and quick to make. Use more or less of the flavors you love, or omit a spice altogether. There really aren’t any rules here! But my kids will bet that you will love this Indian Garbanzo Bean Summer Salad as much as they do…

This salad is refreshing and easy to make during the summer months. All you need are a few easy to find ingredients! To make

1 can Garbanzo Bean

2 Tomatoes, chopped

1 Cucumber, chopped

2 Carrots, chopped

1 Red onion, chopped

4 sprigs of Mint

1 Lemon, zest and juiced

1 cup Extra Virgin Olive Oil

5-6 ounces mixed greens

1/2 teaspoon Cumin

1/2 teaspoon curry

1/2 teaspoon Ginger

1 tablespoon Sugar

Salt/pepper, to taste

Easy Summer Salad Recipe Instructions

Drain and rinse the garbanzo beans. Place beans in a mixing bowl and add mint, cucumbers, carrots, tomatoes and red onion. Zest lemon into fresh ingredients and stir gently to combine flavors. Set aside while making the dressing.

Combine lemon juice and seasonings (cumin, ginger, curry and sugar) in a small mixing bowl. Stream in olive oil while whisking.
