Easy Chicken Recipe That is Anything But Boring
I’m always looking for quick and easy chicken recipes that are different from my standard go-to options. Like many families, we get sick of the same chicken recipes over and over. As a Walmart Mom, I was asked to check out grapes in the produce section of my store and share how we eat them.
How we eat grapes?
The beautiful cylinders of refreshing juice are perfect as is! Sometimes we freeze them for a summer treat, but right off the vine is how we like our green and red grapes. Check out the grower’s video below of a Walmart grape farmer and you’ll agree: the grape vineyard looks like a slice of produce heaven!
But since they asked, I started thinking about grapes in a whole new way. In much of Cuban cooking, produce is sauteed with herbs and spices to create layers of flavor before meat is added. I started to wonder if the same could be done with grapes.
The simple answer is: yes. Yes!
This quick and easy chicken recipe for Pan Seared Grape and Rosemary Chicken Thighs is out of this world! The first time I tested it, the grapes were gone within minutes. I made it again recently while on vacation in a semi-stocked kitchen and it came out great, too. That’s how easy it is! The key ingredients are juicy grapes (truly, the yummiest grapes come from Walmart’s produce), fresh rosemary for a aromatic punch and your favorite garlic and herb butter to flavor the grapes. We used Land O Lakes Garlic & Herb Butter from Walmart, too.
Pan Seared Grapes and Rosemary Chicken Thighs Recipe
What You’ll Need:
– 4-8 Chicken Thighs, on-bone and with skin
– Grapes, red or green… or both!
– 1 bunch fresh rosemary, chopped (use as much as you’d like, keeping a few sprigs whole as garnish)
– 2 tablespoons garlic & herb butter
– Salt/pepper
That’s it!
Season the chicken thighs with a bit of salt and pepper, to taste. In a hot skillet, sear the thighs until golden brown. Remove and lower heat.
Add butter to chicken renderings, along with chopped rosemary and grapes, and cook for a few minutes until the grapes’ skin begins to sear. I left the grapes on the vine for presentation, but individual grapes will cook down quicker when they aren’t.
Add chicken back in pan with a few whole springs of rosemary and cook until done, making sure to coat it with butter along the way.
That’s it!
I’ve served this quick and easy chicken dinner recipe with rice or quinoa, and most recently, on a bed of lettuce with sides of brie cheese, salami and crackers overlooking the gulf coast. It’s a meal I won’t soon forget!
