Pesto Salmon with Feta

I have been following our e-meals clean eating meal plan for about two months, and I still love it as much as when I first started. One of my favorites “recipes” is this Pesto Salmon with Feta cheese. I say “recipe” because, really, it hardly constitutes as one. However, I make it every week because (1) it’s delicious and (2) making this salmon doesn’t get any easier. I usually make a citrus salmon, but this flavor combo has quickly taken over. I also started thinking, how easy would this be for any Dad to cook on Mother’s Day? Super easy!

 

Ideally, you would make your own pesto. It’s not hard at all, and you get to control the levels of flavor. I love the homemade cilantro pesto I make because I crank up the garlic like nobody’s business. Maybe this week I’ll make a cilantro rendition of the Pesto Salmon.

Anyway, back to the pesto – I haven’t been making my own because I don’t have the time. Instead, I always keep some of my favorite prepared pesto in the fridge. This pesto is from Fresh and Easy; you can tell that they load it with parm cheese, as it is very creamy. And I love the consistency. And it’s fresh.

Pesto Salmon

You will need…

  • Filet of salmon
  • Pesto, prepared or homemade
  • Feta cheese
  • Pepper

*I don’t add salt because there is likely enough in the pesto and the feta has some too.

Instructions

Layer the pesto onto the salmon. Sprinkle a layer of feta cheese. Add pepper. Cook pesto salmon at 350 degrees for 20-25 minutes, until cooked to your desired doneness. Salmon should still be flaky and moist but cooked through.

I severed our Pesto Salmon with Feta Cheese alongside some Israeli couscous and a spinach salad. Super easy, quick and delicious meal – even for your hubby that isn’t so great in the kitchen 🙂

    Yum! I have a basil plant growing on my front stoop and I’ve been making pesto with it. I’m definitely going to have to try it on salmon – great combination!
