Slow Cooked Cuban Pork – Lechon Asado

Slow cooked Cuban pork, in Spanish known as Lechon Asado, is usually roasted over hot coals or in a high heat oven. But sometimes, when the craving hits and time is of the essence, I reach to my crock pot to satisfy the flavors of my Cuban heritage. Celebrating Hispanic Heritage with Food Culture

It took me many years to own up to my bicultural Latina identity, but I’ve been cooking hybrid Cuban recipes for years. With a twist of my American practicalities, I can make any Cuban recipe seem like the real thing. Or close to it. Because I am not a huge fan of the traditional American style pot roast, this Slow Cooked Cuban Pork – Lechon Asado, is a great way to add Latino flair to a crock pot meal. And because the traditional Lechon Asado calls for ingredients I don’t always have on hand (like sour orange and mojo), I subbed this delicious Champagne Vinegar that has a hint of citrus flavors infused. It turned out great!

Crock Pot Cuban Pork – Slow Cooked To Perfection

Slow Cooked Cuban Pork Ingredients

Pork shoulder, size depending on your crock pot

1 small/medium onion

Lots of garlic, crushed (I used 6-8 cloves for this, but have been known to use upwards of 20, depending on size of pork)

Orange juice concentrate, 2-3 scoops

1 lime, juiced

2-3 tablespoons Mizkan Champagne Vinegar

Cumin, to taste (This spice is crucial for the flavor of the lechon. Don’t go crazy, but don’t skimp on it either)

Salt/pepper, to taste

Instructions

Throw the ingredients into your crock pot, making sure that the everything is well incorporated. Cook on high for 4 hours, or low on eight. Serve with arroz y frijoles negros, Cuban Black Beans.

When it comes down to Noche Buena Lechon Asado, I’ll likely roast my Cuban pork, but for a regular weeknight dinner, this works great! Using a crock pot makes a busy mom’s life a bit easier, but this Crock Pot Cuban Pork doesn’t make it feel like you’ve sacrificed anything.

    I love your recipes but I have not been able to print the recipes. I can’t highlight the recipe and print just the recipe and also there is no print button to print a “printer friendly” version. Am I doing something wrong?

      Hi Kathy, no… you aren’t doing anything wrong. So sorry about that! I disabled right click in order to prevent further theft of my kids’ images (although it still happens) and didn’t think about how it would impact my recipes. I’ll get to work finding a way to print the recipes. Thank so much for letting me know!
